Dr. Andrew Weil, of True Foods Kitchen will always be, in my eyes, the creator of the Kale culture.  In his work as a doctor, teacher, and best-selling author focusing on the anti-inflammatory diet, he started many on a path of healthier eating. He found the right variety, Tuscan black kale, grew the kale on his ranch, and developed the healthy salad that is an addition to menus everywhere.  I admire the restaurant concept, True Foods Kitchen that he and Sam Fox created in Arizona in the 80’s that has expanded to 10 from coast-to-coast. The brand and every detail is created with a clear understanding of their customer base. The décor and innovative touches from cooking classes to Yoga classes promote this hip and healthy concept.   And the entire menu is a healthy course in dining with great flavors and textures that are totally devoid of deprivation.
